Some mushrooms have healing properties. The mushrooms in this recipe support the immune system. Also the olive oil and veggies will supply the antioxidants you need.
2 tablespoons olive oil
1 1/2 Shitake, and Maitake mushrooms rinsed and chopped.
2 cloves of garlic
1 yellow onion, chopped
1/2 cup parsley chopped
salt to taste
Warm the olive oil in a saute pan then add onion and garlic. Stir occasionally until the onion becomes translucent.
Add mushrooms and saute until tender
Turn off the heat and add the parsley and add salt to taste
Serve and enjoy your meal
