Ingredients

1 cup spiral pasta

1 cup chopped tomatoes

1 clove chopped garlic

2 lemons, juiced

1 cup chopped cucumber

½ cup roasted red pepper

2 tablespoons chopped black olives

1 can cannellini beans

1 6 oz jar marinated artichoke hearts

3 tablespoons olive oil

salt and pepper to taste

 

In a bowl combine the vegetables with the beans and pasta, then mix. Add lemon juice and olive oil. Then add seasoning and let sit for a while and serve.
