White Bean and Pepper Salad
Prep time 15 minutes
2 tsp lemon juice
1 1/2 tsp olive oil
1/4 tsp crushed dried Dillweed
1/8 tsp pepper
1 Clove Minced garlic
1 15 0z can white kidney beans, rinsed
1/2 cup red pepper, 1/2 cup chopped cucumber, 1/4 cup sliced green onion
In a medium bowl, stir lemon juice, oil, Dillweed, pepper and garlic
Add red pepper, beans, cucumber and onions. Toss to coat the mixture.
Cover and refrigerate for 2 to 4 hours. Serves 6.
