Ingredients:

1 cup basmati rice 2 tablespoons cocoanut oil 4 cloves 1 onion and 1 carrot finely chopped

Add 1/3 cups frozen peas and corn 1/4 cup cashews salt and 1/4 teaspoon cumin

Wash the rice several times and let soak in the last wash for 30 to 40 minutes.

Put the oil in a large fry pan and after heating put in cumin seeds and saute.

Add 2 bay leaves and cloves and saute a bit longer.

Add onion until it’s soft. Add the drained rice along with the peas, cashews and corn.

Then  cook for 5 minutes over a medium heat.

Add two cups of water and bring to a boil.

Then cover and let the entire pilaf simmer over low heat for 8 not 10 minutes.

Then fluff up and serve.
