Summer Quinoa Delight

  • 2 cups cooked Quinoa
  • 3 medium sized tomatoes and 2 scallions – diced
  • 2 cups finely chopped fresh parsley
  • 1/4 cup very fine extra virgin olive oil
  • 1/2 teaspoon ground cinnamon
  • Sprinkle generously with pepper to taste
  • Add avocado slices
  • Two tablespoons of lemon juice
  • In a medium sized bowl toss the Quinoa with the lemon juice.

Add the tomatoes, scallions and parsley. Sprinkle the olive oil and toss. Carefully add in the cinnamon and cayenne pepper.
